Asaro Oloyin

What’s cooking this morning?

So instead of the regular Yam and sauce for weekend breakfast, why not asaro oloyin?

There is absolutely no meal you can’t use our spice mix to cook! From local cuisines to intercontinental, our spice mix is the special ingredient that makes it “bang”!

Have you tried to prepare asaro oloyin elemi meje (porridge with 7 lifes) using SMD spice mix? Add fish, a little ugu at the end of cooking for more health benefit, and i promise you a finger licking dish.

I use yam and sweet potates for my Asaro oloyin! Make the starter exactly as you would start your jollof, add the fish into the sauce. Use SMD Multipurpose, seafood, curry and a bit of sauce & marinade spice mix and ofcourse seasslt to taste!

This particular dish taste heavenly, the aroma is nothing like the regular Asaro (porridge). I cant promise you your neighbours wont come knocking, with the aroma from your kitchen lol…. It’s on point, without a single cube of MSG bullion cubes, and proteins included, this is a complete meal with your nutrition taken care of. Even your babies will love this meal.

Do you know that the oven part of your cooking gas stove could be a silent? killer!

Some time ago, I filled my gas cylinder &it finish in 3 days maximum! I was shocked, I suspected that the filling station had been mischievous with their gauge.

I changed where I refilled and the same thing happened 2 other times with different gas stations. I was worried, something was definitely wrong. I spoke to the man who had been servicing my cookers and the first thing he asked me was to go confirm if my oven control switch was on or off! Behold, I had been using the stove burner while the oven burner was on! Apparently because its the oven and the door is closed we do not smell the gas leaking. I was fortunate that I rarely use my home gas oven to bake. Can you imagine the scenario? If I had tried lighting the oven it would have exploded(see how God saves us while we do not know the harm lurking somewhere around us!)!

I have 3 people who have had from mild to severe burns from a gas oven explosion. All 3 didn’t realize the gas had been leaking due to the burners being switched on. Once the strike the lighter, boom!

For people who have young kids who don’t understand don’t touch the gas burner switch how do you protect yourself?

I do these ;
1. I always try to switch off the from the gas cylinder after every use.

2. I have removed the knob of the gas oven burner as seen in the picture. I rarely bake with my home oven so no need to keep it there. If I need it I will put it on.

3. Do not light the burner immediately if you notice the fire has been extinguished through the burner knob is still on. Switch it off and give ample time before putting it on again.

4. Give your children adequate gas safety rules irrespective of their age.

5. Let the younger children use the back burners to cook. This is such so that if there is an accidental spilling of what’s on the stove, it doesn’t pour directly on them but on the front burners.

6. Let younger children cook with adult supervision. My 10 years old cooks a lot, so I needed to read to her the gas cooker riot act!

How To Add Spices and Herbs Part 2

(1). Herbs may be added near the end of cooking for more distinct flavor, or at the beginning for more blended flavors. Ground spices and herbs release their flavors readily. In long-cooking dishes, such as stews, add these near the end of the cooking time to minimise the “cooking off” of its flavors.⁣

(2). Whole spices and bay leaves to release flavor more slowly than ground or leaf form and are ideal for use in dishes with longer cooking times. For easy removal after cooking, tie in cheesecloth or place in tea ball before adding to foods.⁣

(3). For uncooked foods, such as salad dressings, fruits or fruit juices, add spices and herbs several hours before serving to allow flavors to develop and “marry” or blend. Alternatively, the liquid with the seasonings may be heated briefly to release the flavor, then allowed to cool. For salad dressings, add the spices to the vinegar and allow to stand before adding the oil. To add character to regular ketchup, add the spices and herbs and allow to stand for hours to infuse flavours.

EFFECTIVE TIME MANAGEMENT IN THE KITCHEN.

Today we will be talking about effective ⌚ management in the kitchen. For most of us, a quick meal turns out to be at least an hour in the kitchen, except we are cooking noodles(which you should be careful about consuming due to the high msg content and a whole sort of artificial additives there in+)!
From opening the fridge to take out something, we notice all sorts of things instead of going to cooking straight away!

From seeing something spoilt, we take it to the bin, they have to take out the trash, wash the dishes, kids start bickering… Our quick meal flies right out of the window! So how do we manage kitchen time especially on work/school days?
Let me break things down.

1. First thing first, you need to have a menu table that helps you prepare for the next day.
In having a menu table, you should have all your needed ingredients at hand.

2. Keeping ingredients within reach in a non clustered working area. This will help you get things quickly and without the delays of searching.

3. For those who have older kids, make a roster for each day of the week, or the day of the week you are most harried for a child to assist you. The child will be your errand hand, get you things from the fridge (and you won’t notice the spoilt whatever ;)!).

4. Get everything you will need for your meal before the time you start cooking, wash as you go, and remember that your kitchen hand can do the easy jobs, so give her some chores!

5. Since we use natural spices and not artificial seasoning cubes, make sure you have available your regular spice mix flavours that will allow you to cook any meal of choice!

6. Don’t be tempted to start other things. If you are cooking school Lunch at breakfast, get food flask ready and preheated the and finish that before moving to another chore…

7. Stock your freezer with half-done meals eg beans, Fried sauce for Jollof and for efo etc. Wrap your already plucked leafy vegetables in brown paper and keep in the fridge.

Do you need measuring cups and spoons for cooking/ baking?

Chefs& cooks undergo training, difficulties and challenges trying to make a perfect recipe. Measuring cups and spoons are one of the magical equipment in the kitchen, especially for baking!

You might be wondering, “Is it so important that I measure accurately when cooking? ”
It might not be so necessary to measure for cooking, except a recipe specifically calls for measurements! For natural cooking and because you are just starting, I will recommend you follow the spice mix measurement you find in our recipes (recipe cards and the eCopy recipes.).

Baking, however, is an entirely different kettle of fish! Precise measurement is the secret to perfect & delicious bakings! Baking is a science, you need to measure the very least of ingredients in order to get perfect results. Even the world best chefs measures when it comes to baking. You cannot afford to assume based on your own thinking, please. You cannot eyeball, every little gram or mills is important, you cannot add more or less!

When it comes to cooking, you may be allowed to do justice as preferred, especially when you are a seasoned cook! You will still need to measure your major ingredients, however, and might just need to eyeball other ingredients. For new cooks, I recommend strict following of measurements to get perfect delicious tastes.

Following the step by step instruction and measuring ingredient when you’re baking at home isn’t difficult. What makes it difficult is when you don’t have the required measuring instrument to measure accurately. Or when you don’t understand the conversation of your measuring equipment. When you get to understand measurements, you just might be able to use available tools in your kitchen to make perfect bakings. The recommendation, however, is to strictly get measuring cups and spoons.
