Will you add chilli to your pancake?
We yorubas are funny people you know? We just like a little chili in almost everything (we are hot like that #fanningself)…
So in the spur of the moment I decided to make coconut milk pancakes (I love coconut milk…) and yes i decided to add chili to my pancakes… Even hubby who isn’t exactly a fan asked for second helping with this my part Yoruba pancakes #winks!
SMD Coconut & Chili Pancake Recipe.
INGREDIENTS
1. Flour 3 cups.
2. Eggs 2.
3. Melted Butter 2 tablespoons.
4. Chili powder 1/2 -1 tsp(I used half as i just wanted slight flavour.).
5. Coconut milk 2 & 1/2 – 3 cups.
6. Baking powder 2 teaspoon.
7. Baking soda 1 teaspoon.
8. Salt 1 teaspoon.
9.Vinegar 3 tablespoons.
10. Sugar 3 tablespoons.
11. Honey and butter to serve.
METHOD
> Sieve flour, baking powder,and baking soda together.
> Add chili powder,salt and sugar to the dry ingredients.
> Add vinegar to coconut milk and leave for about 5 minutes.
> Melt butter,break and whisk eggs and add all to milk.
> Mix all wet ingredients together,then make a well in the middle of the dry ingredients.
> Pour in the wet ingredients, whisk gently to break lumps.
> Allowed batter to rest for 5 minutes.
> Add a little butter to the pan on medium heat, using a cup pour batter in the pan(batter should be a little runny.).
> Once bubble forms on top of pancakes, flip to the other side and allow to brown(check bottom of pancake to be sure it’s done).
> Repeat till batter is used up.
> Keep stacking pancakes on top of one another, to keep them warm.
> Serve with a dollop of butter and honey (i use @opefarms honey)drizzle.
You may also serve with something savoury in between the pancakes and role them up.
